Recipe of the Week

Mediterranean Stuffed Peppers

Mediterranean Stuffed Peppers

Ingredients

  • 4 bell peppers (any color – rich in vitamin C + carotenoids)

  • 1 cup cooked quinoa (complete protein, fiber, magnesium for brain function)

  • 1 cup cherry tomatoes, chopped

  • 1 cup spinach, chopped

  • ½ cup Kalamata olives, sliced (healthy fats + polyphenols)

  • ½ cup chickpeas (plant protein + fiber)

  • ¼ cup crumbled feta (optional)

  • 2 tbsp olive oil

  • 2 cloves garlic, minced

  • 1 tsp oregano

  • Juice of ½ lemon

  • Salt + black pepper

Instructions

  1. Preheat oven to 375°F (190°C). Cut tops off peppers, scoop out seeds.

  2. In a skillet, sauté garlic and spinach in olive oil until wilted.

  3. Mix quinoa, tomatoes, spinach, olives, chickpeas, oregano, lemon juice, and feta. Season to taste.

  4. Stuff peppers with mixture, place in a baking dish, cover with foil.

  5. Bake 25–30 minutes until peppers are tender.
